No elements, no heat; Why is cold forming important for most pie production? Because hot blocking destroys pastry’s texture, properties and taste by melting the fat layers, essentially killing and preventing the pastry from rising and performing as it should, particularly with layered puff and other delicate pastries.

To achieve the highest quality in pastry production, pastry has to be cold worked and worked fast, and as little as possible.

Cold food forming is advantages in speed,  increased quality and reduced costs; Being pressure adjustable makes the forming of some difficult speciality products efficiently possible.

Production capacity is relevant to the process, and will, therefore, be as high as one is organized and efficient. Unique internal mechanism lifts the finished product out of the tool; Enabling quick damage-free unloading of product. Product ejection is standard on all our machines.

 

Product of almost any shape is possible; Including complex fluted pie containers, square, rectangular, oval, or other non-round shapes are available for choice. 

 

Besides its speed, an advantage is that any excess pastry trimmed in the pie sealing, Lidding/Crimping stage of pie production can be recycled through the process without any negative effects.  Effectively creating 0% wastage.
